Description

A vibrant and nutritious Red Rice Salad that’s perfect for busy families, packed with flavors and easy to make.


Ingredients

  • 1 cup red rice (or wild rice)
  • 1 large cucumber
  • 1 mango
  • 3 tangerines
  • 1 cup cashews
  • 1 cup frozen edamame
  • 1/2 bunch fresh cilantro
  • 2 tablespoons toasted sesame oil
  • 2 tablespoons tamari
  • Juice of 1 lime
  • 2 tablespoons sesame seeds

Instructions

  1. Cook red rice according to package directions until al dente.
  2. Prepare ingredients: peel and chop the tangerines, dice the cucumber, scoop mango, and chop cilantro.
  3. Dry-roast the cashews in a pan over medium-high heat until golden brown.
  4. Rinse the cooked rice under cold water, then combine with tamari, lime juice, and toasted sesame oil.
  5. Add all chopped ingredients and sesame seeds to the rice, and gently fold to combine.

Notes

This salad keeps well in the fridge for 3-4 days and tastes even better the next day. Customize with seasonal fruits or proteins as desired.
