A vibrant and nutritious Red Rice Salad that’s perfect for busy families, packed with flavors and easy to make.
Ingredients

- 1 cup red rice (or wild rice)
- 1 large cucumber
- 1 mango
- 3 tangerines
- 1 cup cashews
- 1 cup frozen edamame
- 1/2 bunch fresh cilantro
- 2 tablespoons toasted sesame oil
- 2 tablespoons tamari
- Juice of 1 lime
- 2 tablespoons sesame seeds
Instructions
- Cook red rice according to package directions until al dente.
- Prepare ingredients: peel and chop the tangerines, dice the cucumber, scoop mango, and chop cilantro.
- Dry-roast the cashews in a pan over medium-high heat until golden brown.
- Rinse the cooked rice under cold water, then combine with tamari, lime juice, and toasted sesame oil.
- Add all chopped ingredients and sesame seeds to the rice, and gently fold to combine.
Notes
This salad keeps well in the fridge for 3-4 days and tastes even better the next day. Customize with seasonal fruits or proteins as desired.
